-½ cup finely chopped onion
-¼ cup finely chopped dry roasted peanuts plus additional chopped peanuts for topping
-1 tablespoon snipped fresh cilantro
-1 tablespoon grated fresh ginger
-3 cloves garlic, minced
-1 teaspoon salt (we used kosher salt)
-¼ to ½ teaspoon crushed red pepper (we used ½ teaspoon)
-1 pound lean ground pork
-1 tablespoon sesame oil (we used toasted sesame oil)
-1/3 cup Asian sweet chili sauce
-1 tablespoon creamy peanut butter
-1 clove garlic, minced
-4 French rolls or hamburger buns, split and toasted (we used buns)
-1 cup shredded bok choy (we sliced up the green leaves of the bok choy)
1.) Take a medium-sized mixing bowl out and mix together the onion, peanuts, cilantro, ginger, 3 cloves minced garlic, salt and red pepper. Now add the ground pork to the bowl and mix everything together real well. Divide the pork mixture into 4 pieces, shaping each piece into a ½-inch thick patty. Brush the patties with the sesame oil and leave them off to the side for now.
2.) For the sauce, take a small mixing bowl out and mix together the chili sauce, peanut butter, and the 1 minced clove of garlic, leaving the sauce off to the side for now. If you’re using a charcoal grill, put the patties on the grill grate directly over medium coals. Grill for 10 to 13 minutes or until it reaches 160 degrees, flipping halfway through. If you’re using a gas grill, preheat the grill first then turn the heat down to medium. Place the patties on the grill rack over direct heat, cover, and cook for the amount of time previously mentioned and flip halfway through said cooking time.
3.) Take your roll or bun bottoms and place the bok choy on it. Add the burger, sauce, additional peanuts and finally place the roll/bun top on the whole thing and enjoy !
This was such a delicious burger. It was good with or without the additional chopped peanuts.
